Transfer and dosing of sauces
The transfer of purees and sauces, for example, requires gentle pumping to avoid oxidation and preserve the texture of the products. PCM progressive cavity pumps are ideal for the transfer of oils, mustard, ketchup, mayonnaise, béchamel or tomato sauce with optimal hygiene. They ensure the transfer of ingredients at a constant rate, regardless of the viscosity of these products. In addition, the Moineau™ technology avoids product shearing, thus respecting their texture.
Delasco™ peristaltic pumps, on the other hand, are perfect for batch transfer uses (emptying cookers, European trolleys, mixers, IBCs, etc.).
Mayonnaise Transfer
Mayonnaise is a very fragile "oil-in-water" emulsion. Excessive rolling would break its texture, separate the water from the oil, making it more or less liquid and not very attractive visually and tastefully. The use of a 4-step Hycare™ PCM pump reduces the internal leakage between the rotor and the stator as much as possible , thus respecting the product by limiting lamination as much as possible, while respecting hygiene requirements.
